《纲要》指出,我国目前食物消费中的不平衡性还 十分突出,营养过剩与营养不良的状况有加剧的趋势。这确是应该引起重视的问题。营养不良对人体健康的危害比较容易了解,在膳食中任何一种营养素长期缺乏可出现相应的营养缺乏症。营养过剩同样会给人们带来不幸,如三大产热营养素(蛋白质、脂肪、碳水化合物)摄入过多,多余的热能会以脂肪的形式储存在身体内,随之出现肥胖症、高血压、动脉硬化、心脑血管疾病、糖尿病及部分肿瘤等等,即人们所称的“富裕疾病”。
