伯利哀法是被用来检测花生油的特异方法。其原理是利用花生油中含有花生酸等高分子饱和脂肪酸在某些溶剂中(如乙醇)的相对不溶性的特点作为鉴别依据。通常以混浊温度为39~40℃判断为纯花生油.但当前食用油市场掺假、掺杂、伪品情况严重.在我们日常监测工作中常发现掺杂的花生油按伯利哀原法检查.往往在40℃以上就显混,影响结果的观察和判断。为此,我们通过反复实验,将其修改和补充,提高了判断正确性,基本上和气相法结果相符,适用于现场和基层监测工作。
