Anthocyanins have not only vivid colors,but also potential beneficial health effects,such as protecting against of cancer,oxidation and hyperglycemia.Hence,anthocyanins have been applied in the field of food,medicine,and cosmetic.Colored potato (Solanum tuberosum L.) skin is not only a rich source of anthocyanins,but also the byproduct of the potato processing.Moreover,anthocyanins from the colored potato skin (PPSAs) are acylated and stable.Consequently,PPSAs show their potential as a good source of natural anthocyanin pigments.Anthocyanins from the colored potato have been studied widely,while the anthocyanins from the colored potato skins are almost empty.Therefore,the ultrasonic-assisted extraction was used in the process of PPSAs production and the production of PPSAs was further optimized by the response surface methodology.
