据说,过去在老一辈扬州人手中都有一张『吃鱼时间表』,即:正月菜花鲈、二月刀鱼、三月鳜鱼、四月鲥鱼、五月白鱼、六月鳊鱼、七月鳗鱼、八月鲃鱼、九月鲫鱼、十月草鱼、十一月鲢鱼、十二月青鱼(以上皆为农历)。这张时间表记载的是野生河鱼的最佳食用时间。不过,在今天的扬州、乃至整个江南地区,对于这些纯自然的鲜味剩下的只有唏嘘,以及偶然碰到的好口福。因为本期我们推荐的是春夏河鲜,所以7月之后的河鲜暂且不表。刀鱼、鲥鱼这些河鲜贵族已经被人讲过无数次,自然不在本此推荐河八鲜之列,仅剩菜花鲈、鳜鱼、白鱼、鳊鱼且听娓娓道来。
