目的了解石河子市油条、油饼中污染指标铝的含量,为今后开展监督监测提供依据。方法对石河子市区内油条、油饼抽样送检,检测方法按照GB/T5009.182-2003《食品中铝的检测》进行。卫生学评价按GB15202-2003《面制品中铝限量》标准进行评价,铝含量(以干重计)≤100mg/kg为合格。结果送检的样品中油条铝含量超标率100%,最高含量1434mg/kg。油饼含量超标率20%,最高含量318mg/kg。结论油条中铝严重超标是因为加工过程中滥用明矾造成的,应尽快使用无铝膨松剂代替明矾,保障消费者身体健康。
Objective To understand the content of aluminum in pollution indicators of fried dough sticks and oil cakes in Shihezi City and provide the basis for monitoring and monitoring in the future.
