Little Fish May Solve Cambodia’s Major Health Problem
Crush some garlic, chop up a whole chicken, some fresh herbs, add a squeeze of 1)lime juice, a 2)pinch of salt, then pop in a lucky iron fish. Stir the pot and 3)simmer gently for 30 minutes. It’s not a mistake in the recipe, because this smiling fish just might be the most unlikely ingredient in Cambodian cooking today.
Woman A: (via translator) At first my family thought it was very funny, very strange, why I was putting the iron fish in the boiling water or soup. So I explained to them that it can help improve our health and make us stronger.
With many rural people existing on a dollar a day, iron supplements in red meat are often out of reach, leading to iron deficiency and 4)anemia across Cambodia.
Local Doctor: Most Cambodians suffer from low iron because they live in the countryside, and they don’t have enough money to buy meat like beef, and also they don’t consume enough vegetables.
The fish are made from recycled iron and crafted at this neighbourhood factory. Once cast, the lucky iron fish is packaged, by a local disabilities cooperative, in a traditional basket. Depending on its use, it can last for up to five years before needing a replacement.
The fish works by 5)leaching small amounts of iron into the cooking water, which are then slowly processed by the body.
Woman B: (via translator) Yes, I will definitely use this iron fish during cooking. I think all the people in here will like the fish, because fish is our main food every day.
Results from previous trials show rates of anemia were cut by almost half, an indication that this innovative smiling fish could be the answer Cambodians have been waiting for.
