香菇是餐桌上常见的药食两用食品,其性平、味甘,入肝经、胃经,具有补肝肾、健脾胃、理气化痰、抗肿瘤等功效。香菇味道鲜美,香气沁人,营养丰富,有菇中之王的美誉。香菇含有多糖、氨基酸、香菇素、维生素D原、核酸类物质等营养成分,其所含的β-葡萄糖苷酶能提高机体抑制癌瘤的能力,间接杀灭癌细胞,阻止癌细胞扩散。此外,香菇还有降低胆固醇、预防动脉硬化及增进食欲的功效。
