香菇是世界第二大食用菌,在民间素有“山珍”之称,深受人们喜爱,那么该怎样鉴别香菇的质量呢?选购香菇时,应从以下几方面加以鉴别:香菇品质总的要求是:体圆齐正,菌伞肥厚,盖面平滑,质干不碎。手捏菌柄有坚硬感,放开后菌伞随即膨松如故。色泽黄褐,菌伞下面的褶裥要紧密细白,菌柄要短而粗壮,远闻有香气,无焦片、雨淋片、霉蛀和碎屑等。按香菇品种不同,质量要求也有差异。
