目前我国旅游业发展进入鼎盛时期,但是其中一个分支行业却在不断萎缩,从事烹饪行业的人才呈快速下降趋势,需求量却不断扩张,这种不对称的状态,引发了人们的思考。本文着重论述烹饪专业教学的项目目标如何确定和引领,研究了烹饪专业总体课程项目化实践所得,并且对实践过程中出现的进行反思,提出建设性意见,促进课程项目化更加完善。
At present, the development of China’s tourism industry has entered its heyday, but one of the sub-industries is shrinking constantly. The talent in the cooking industry shows a rapid downward trend while the demand is constantly expanding. This asymmetrical situation has aroused people’s thinking. This article focuses on how to identify and lead the culinary specialty teaching project objectives, and studies the project-based practice of the culinary major curriculum. It also reflects on what emerges during the course of practice and puts forward constructive suggestions to promote a more complete course project.
