目的了解南宁市食品中食源性致病菌污染状况,为防控食源性疾病提供科学依据。方法按照定点随机采样的原则采集市售的10类193份食品样品,按照国家规定的标准检验方法和《广西食源性致病菌监测工作手册》规定的检测技术对食源性致病菌进行分离、培养、鉴定。结果从193份各类食品中检出致病菌25株,总检出率为12.95%(25/193)。其中腊样芽胞杆菌检出率为63.64%(14/22),金黄色葡萄球菌检出率为5.75%(10/174),单核细胞增生李斯特菌检出率为0.65%(1/155)。结论南宁市市售食品有不同程度的食源性致病菌污染现象,存在食品安全隐患,应该引起相关部门的重视。
Objective To understand the status of food-borne pathogenic bacteria in food in Nanning and provide a scientific basis for the prevention and control of food-borne diseases. Methods According to the principle of random sampling, 193 samples of 10 types of food were collected and tested for food-borne pathogenic bacteria according to the standard test methods stipulated by the state and the detection technique stipulated in the Manual of Guangxi Foodborne Pathogenic Bacteria Monitoring Separation, cultivation, identification. Results Twenty-five pathogens were detected from 193 different types of food, with a total detection rate of 12.95% (25/193). The detection rate of Bacillus cereus was 63.64% (14/22), the detection rate of Staphylococcus aureus was 5.75% (10/174), the detection rate of Listeria monocytogenes was 0.65% (1/155 ). Conclusion Nanning City, the sale of food have varying degrees of food-borne pathogens contamination, the existence of food safety risks, should cause the relevant departments attention.
