茶来亦有山泉烹品茶必先试水,这是古往今来的饮茶之道,为中外所推崇。茶之与水,胜过酒之与水。水质差,茶虽佳,起不到好茶的作用。在香港,山涧溪畔亦有山泉可以烹茶,这是很可喜的。香港的山涧溪水不少,如香港仔有瀑布湾、上环有水坑口、山顶和扶林村有瀑布溪,九龙有绕丝溪等等。在港九许多有名的溪涧中,绕丝溪是最著名的一个。主要是环境幽静,清涧流泉,引人入胜,是烹茶品茗的佳处。
