不同来源的中华绒螯蟹扣蟹第一次蜕壳前后体内类胡萝卜素含量的动态变化

  在中华绒螯蟹扣蟹生产实践中,大多数养殖户认为扣蟹质量的好坏可以通过其肝胰腺及其甲壳的颜色来加以判断。蟹壳和肝胰腺是中华绒螯蟹储存类胡萝卜素的重要器官。其中,肝胰腺中的主要色素是β-胡萝卜素,蟹壳中主要是虾青素。早春,取长江水域、养殖户常规养殖和专用配合饲料培育的幼蟹(扣蟹)进行饲养至第一次集中蜕壳,采用荧光分光光度计法和色差仪,对其在第一次蜕壳前后蟹壳和肝胰腺中虾青素和β-胡萝卜素含量的动态变化进行比较研究。结果 表明:1、长江野生扣蟹的肝胰腺黄色色泽比养殖户常规养殖扣蟹、专用配合饲料培育的扣蟹之肝胰腺颜色明显较深,但并不与其虾青素和β-胡萝卜素含量相对应。三种不同来源的扣蟹蜕壳前,专用配合饲料培育的扣蟹的虾青素和β-胡萝卜素含量均明显比长江自然水域和养殖户常规养殖扣蟹高;2、扣蟹之虾青素和β-胡萝卜素含量与第一次蜕壳的表现无一致性。总体上看,以长江野生扣蟹第一次蜕壳的表现最好,其蜕壳率和蜕壳成功率均明显比养殖户常规养殖扣蟹、专用配合饲料培育的扣蟹高。专用配合饲料培育的扣蟹的蜕壳率和蜕壳成功率最低;3、背壳的色差与其虾青素、β-胡萝卜素含量没有一致性。扣蟹养殖生产上,通过其肝胰腺和甲壳的颜色来判断质量的好坏存在不确定性。
