基于低场核磁共振技术的大菱鲆加工工艺(烘烤和微波)中品质监测研究

  本研究旨在将低场核磁共振及成像技术结合在一起,利用其快速、无损、非侵入的优点来监测大菱鲆肌肉在烘烤和微波两种加工工艺过程中水分的迁移规律和品质变化。不同时间段的质子信息由CPMG弛豫数据经过多指数拟合得到并由T2横向弛豫呈现。内部的质子变化信息由T1和T2加权成像展现,达到了可视化的效果。烘烤和微波两个过程均可观察到四个不同的峰。主成分分析法也被运用到分析中,鉴别效果显著。同时利用了光学显微镜进行观察,发现两种工艺中鱼肉纤维均发生了不同程度的断裂。失重率、颜色、剪切力三个指标在两个工艺中均与核磁参数之间均具有良好的线性相关性,对于持水力这一指标,与烘烤工艺的核磁参数具有良好的相关性,而与微波工艺的核磁参数不具有良好的相关性。所有结果均表明,利用低场核磁及成像技术相结合的方法来监测大菱鲆在烘烤和微波工艺中的品质变化是可行的。
