周礼·酒正篇:“酒正掌酒之政令,以式法授酒材”。原注:式法作酒之法,式作酒既有米曲之数,又有功沽之巧……酒材即米、曲蘖授与酒人,使酒人造酒。……掌浆人则浆之法式及浆材亦授之。……酒正,为周朝所设酒官之长。职掌制酒之政令者。酒正不但负有根据政府规定的酿酒方法,并按标准发放酿酒原料,并监督酒人,遵守酿造“六必”的操作规程。此外还有许多关于当时酿酒及礼乐制度方面必备的职责。看来颇似当今的总工程师,而酒人者如现今的酿酒工人。
