祁门红茶,不仅是工夫红茶中珍品,而且也是我国主要外向型出口茶类。该茶品质特点;条形紧细苗秀、色泽乌润、金毫显露、汤色红艳明亮、滋味鲜醇甜厚。尤其是独特芳香深爱国内外消费者青睐。研究表明,祁红由于香叶醇含量特高,故而含有浓郁玫瑰花香。国外称“祁门香”。关于祁红香气形成大都在加工中产生,但与茶树品种,生态环境也是密切相关。本项研究旨在,通过对同一茶树品种,同一制茶加工方法的鲜叶和干茶中芳香物质测定以及实感香气表现,来探讨不同生态自然环境对祁红香气的影响。
