韭菜,又名扁菜、长生菜、壮阳草、洗肠草。韭菜原产于我国,是百合科多年生宿根性蔬菜。抗寒耐热,适应性强,南北各地都有栽培。每100克韭菜中含蛋白质2.4克,脂肪0.4克,碳水化合物3.2克,粗纤维1.4克,含维生素A8毫克,维生素C35.6毫克,钙42毫克,磷38毫克以及尼克酸、抗坏血酸、挥发油等元素,具有奇特的杀菌作用和营养价值。韭菜中的粗纤维是人体不可少的物质。
