近红外光谱技术将光谱数据与化学计量学相结合,数据进行定性或定量分析,在农作物、果蔬、食品等方面的检测中有着广阔的应用前景。果实品质的好坏直接关系到农民经济效益,影响果品产业发展,对果品品质快速、高效检测及评价有重要的现实指导意义。介绍了近红外光谱技术的测定程序,综述了其在果实糖度、酸度、硬度、维生素C、水分等定量分析方面的应用,总结了其在果品品种、产地、贮藏期果实品质定性判别和果实褐变及损伤、病害种类识别等定性分析方面的应用现状与研究进展,并展望了其发展前景。
