目的了解开封市餐饮具消毒合格情况,为餐饮具卫生监督提供科学依据。方法按GB 14934-94《食(饮)具消毒卫生标准》规定的纸片法进行采样和大肠菌群的快速检测及评价,数据录入和分析采用SPSS 13统计软件进行。结果 2009—2011年共检测9 429件餐饮具,合格8 319件,总体合格率为88.2%;餐饮具合格率呈逐年上升趋势,各年度间餐饮具消毒合格率差异有统计学意义(P<0.05)。不同餐饮单位餐饮具检测结果合格率比较:学校集体食堂最高,为92.9%;大型宾馆酒店娱乐场所合格率最低,为84.7%,差异有统计学意义(P<0.01)。不同季度检测结果差异明显,第2、3季度合格率明显低于其他季度,差异有统计学意义(P<0.01)。结论开封市餐饮业中使用的餐饮具卫生状况整体情况较好,建议卫生监督部门加强对大型宾馆酒店和夏秋两季的餐饮具卫生监管力度,尤其是在第2、3季度。要加强餐饮业从业人员的卫生知识培训,提高餐饮具消毒合格率,从而防止食源性疾病的发生。
Objective To understand the qualified disinfection of tableware in Kaifeng City and provide a scientific basis for the hygiene supervision of tableware. Methods Sampling and coliform rapid detection and evaluation according to GB 14934-94 “Sanitary standard for food (drink) disinfection” were carried out. Data entry and analysis were performed by using SPSS 13 statistical software. Results A total of 9 429 tableware were tested during 2009-2011, with a total of 8 319 passes. The overall pass rate was 88.2%. The pass rate of tableware increased year by year, and there was significant difference in passing rate of tableware between years (P < 0.05). Test results of different catering units catering test pass rate: the highest school collective canteens, 92.9%; large hotel hotel entertainment lowest rate of 84.7%, the difference was statistically significant (P <0.01). The results of different quarters were significantly different, the first and second quarters of the pass rate was significantly lower than the other quarters, the difference was statistically significant (P <0.01). Conclusion The overall health condition of the tableware used in the catering industry in Kaifeng City is good. It is suggested that the health supervision departments should strengthen the hygiene supervision over the large hotel hotels and summer and autumn dining tableware, especially in the second and third quarters. To strengthen the catering industry practitioners of health knowledge training, improve the pass rate of tableware disinfection, so as to prevent the occurrence of foodborne diseases.
