为延长双孢蘑菇的贮藏期限,维持菇体的品质、色泽和风味,现将其保鲜技术作一介绍,用户可根据条件适当选择。一、气调保鲜法室温条件下,0.5%~1%浓度氧气和5%~25%的浓度二氧化碳的空间,将使菇体内α—氨基酸积蓄明显抑制与胱酶活性降低。操作时,采用具有透气性的塑料袋包装,袋内氧气控制在1%左右,二氧化碳控制在10%~15%,可使双孢蘑菇一周内色泽新鲜,品质上佳。
