甘薯作为一种营养健康的食物,含有多种保健功能成分,包括膳食纤维、维生素、可溶性蛋白等初级产物,以及咖啡酸及其衍生物、花青素、类胡萝卜素等丰富的次生代谢物质。越来越多的研究表明甘薯的许多次生代谢产物具有清除自由基,抗氧化,预防癌症、心血管疾病及糖尿病等保健功能。深入研究甘薯中保健功能活性成分对合理开发和利用甘薯资源具有重要意义。
