目的了解江门市区12类食品中金黄色葡萄球菌(以下简称金葡菌)的污染和耐药状况,为防治金葡菌引起的食源性疾病提供科学依据。方法依据国标方法,并按《广东省食源性致病菌监测计划》检测技术的要求,对采集的食品样本进行金葡菌分离和生化鉴定,对结果作统计分析。结果从12类993份食品中,共检出金葡菌42株,阳性率为4.23%。其中以非定型包装熟肉中阳性率最高,为9.37%;其次是速冻熟制米面制品,阳性率为8.33%;凉拌菜、生禽肉、生羊肉、生牛肉、生猪肉、生食蔬菜和非发酵豆制品的阳性率分别为3.41%、3.33%、2.00%、1.82%、1.67%、1.14%,1.12%。在沙拉、牛奶和冰淇淋中均未检出金葡菌。检出金葡菌对17种抗生素出现了不同程度的耐药。结论江门市区食品中存在着金葡菌食物中毒的潜在危险,应加强非定型包装熟肉、速冻熟制米面制品等食品金葡菌污染的监测,金葡菌对多种药物的耐药性提示要安全使用治疗药物。
Objective To understand the contamination and drug resistance of Staphylococcus aureus (hereinafter referred to as Staphylococcus aureus) in 12 kinds of foods in Jiangmen city and provide a scientific basis for preventing foodborne diseases caused by Staphylococcus aureus. Methods According to the national standard method and according to the requirements of the detection technology of foodborne pathogenic bacteria surveillance program in Guangdong Province, the collected food samples were isolated and biochemically identified, and the results were statistically analyzed. Results A total of 42 strains of Staphylococcus aureus were detected in 12 kinds of 993 food samples, the positive rate was 4.23%. Among them, the highest positive rate was 9.37% in non-stereotyped cooked meats, the second was quick-frozen cooked rice products with the positive rate of 8.33%; salad, raw poultry, raw lamb, raw beef, raw pork, raw vegetables and non- The positive rates of fermented soybean products were 3.41%, 3.33%, 2.00%, 1.82%, 1.67%, 1.14% and 1.12% respectively. Staphylococcus aureus was not detected in salads, milk and ice cream. Staphylococcus aureus detected 17 kinds of antibiotics appeared varying degrees of resistance.
