目的探讨食物中毒发生的原因,预防此类食物中毒的发生。方法采用现场调查法,对就餐者和食物中毒发生地点进行调查,对剩余食物、患者的排泄物、可疑中毒食品进行现场采样做定性和定量实验。结果此次调查共发病5人,根据现场毒物快速检测定性实验和实验室定量分析结果,证实这是1起误食而引起的急性亚硝酸盐食物中毒事件,结论按照GB/T5009.33-2010盐酸萘乙二胺法方法对食品中的亚硝酸盐与硝酸盐的测定中,如试验中加入显色剂后溶液呈现黄色或紫红色立即退去则应对样品稀释后重新测定;建议有关部门加强食品行业人员的培训,加大食品安全宣传力度,日常饮食中预防亚硝酸盐中毒。
Objective To explore the causes of food poisoning and prevent the occurrence of such food poisoning. Methods By field investigation, the place of diner and food poisoning was investigated.
