柑桔果实是有生命的组织,不断地进行呼吸,在将糖份转化为二氧化碳和水时放出大量的热能。采收后,果实的水份和营养物质的供给中断了,虽然呼吸作用趋于停止,但糖份还继续转化成降解物。
Citrus fruits are living tissues that breathe in and release large amounts of heat as they convert sugar to carbon dioxide and water. After harvesting, the supply of water and nutrients to the fruit is interrupted and the sugar continues to be converted to degradants, although the respiration tends to cease.
