高升排骨,由逐渐变化的调料而命名,有步步高升的含义。排骨皆为小节,用碧绿的菜薹垫底,摆盘一层一层垒起来,寓意来年更上一层楼,步步高升。材料:排骨1斤,葱段、姜片、八角、芝麻、菜薹、盐、生抽、韩式辣椒酱、番茄酱、果醋、高汤、味精各适量。做法:1.排骨焯水,加葱、姜、八角煮半小时,捞出控水,排骨汤不要倒掉。2.锅中倒油炒排骨,煎到肉金黄(不怕费事的可以炸)。
