分析了异育银鲫卵巢、肌肉的生化成分和氨基酸。结果表明,卵巢水分含量低于肌肉,而其蛋白质、脂肪、灰分、无氮浸出物及能值则高于肌肉,其中脂肪和无氮浸出物含量有明显差别。卵巢的17种氨基酸总量和7种必需氨基酸含量也都高于肌肉。卵巢氨基酸含量分布顺序与肌肉有一定区别,有13种氨基酸的含量是卵巢高于肌肉,差异明显的是甘氨酸、胱氨酸、丝氨酸和脯氨酸;有4种氨基酸是肌肉高于卵巢,差异较明显的是天门冬氨酸和赖氨酸
The biochemical composition and amino acids of ovary and muscle of allogynogenetic crucian carp were analyzed. The results showed that the water content of ovary was lower than that of muscle, while the contents of protein, fat, ash and nitrogen-free extract were higher than that of muscle. There was significant difference between fat and nitrogen-free extract. Ovarian 17 kinds of amino acids and seven kinds of essential amino acids are also higher than the total muscle. There is a certain difference between the order of amino acid distribution in ovary and the muscle. There are 13 kinds of amino acids in the ovary that are higher than those in the muscle. The obvious differences are glycine, cystine, serine and proline. Four kinds of amino acids are higher in muscle than in ovary, More obvious are aspartate and lysine
