选料:罐头鲍鱼150克、鸡脯肉100克、糯米半小碗、白米半小碗、天麻15克、枸杞子10克。调味料:盐2匙、姜丝少量、料酒、胡椒粉、香菜各少量。做法:1.鸡脯肉洗净,放入天麻、姜丝,加7碗水用温火煮。鸡肉熟后捞出。2.糯米、白米洗净后放入煮好的鸡汤,煮成粥(约20分钟)。3.鲍鱼切片,连同罐头的汤汁一块加入粥中煮开后,加入枸杞子。4.把粥盛入盘中,加入鸡丝,食用时再撒上胡椒粉及香菜末。功效说明:鲍鱼对肝脏有极佳的补养功效,与枸杞子搭配可防止视力减退、补肝血,配合天麻烹煮可预防老年痴呆及头晕目眩。对莘莘学子来说,此款菜也是增强记忆的极佳补品。小雨/编
