目的了解平顶山市亚硝酸盐在散装熟肉制品中的使用状况,关注食品卫生安全,保障居民身体健康。方法在市区和几个县区各抽取3~5个监测点(市场),各监测点采集散装熟肉制品1份以上进行亚硝酸盐残留量测定。结果2011-2013年共采集、检测熟肉制品样品344份,检出亚硝酸盐残留量331份,检出率为96.2%;超标94份,超标率为27.3%。2011-2013年3年间残留量差异无统计学意义(t=1.106,P=0.270),超标率差异有统计学意义(χ2=16.44,P=0.000),城乡间超标率差异无统计学意义(χ2=0.406,P=0.524),猪肉、牛肉超标率差异有统计学意义(χ2=20.832,P=0.000),羊肉、牛肉超标率差异有统计学意义(χ2=12.423,P=0.000),牛肉超标情况显著高于猪肉及羊肉超标情况。结论平顶山市散装熟肉制品亚硝酸盐污染超标情况较为严重,其中牛肉超标率最高,严重影响人民群众身体健康,应引起社会高度重视。
Objective To understand the use of nitrite in bulk cooked meat products in Pingdingshan, pay attention to the hygiene and safety of food and ensure the health of residents. Methods Three to five monitoring sites (markets) were sampled in urban area and several counties, and more than one bulk cooked meat product was collected at each monitoring site for the determination of nitrite residues. Results A total of 344 samples of cooked meat products were collected during the period from 2011 to 2013. A total of 331 samples of nitrite residues were detected. The detection rate was 96.2%. Exceeds the standard of 94 samples and the exceeding standard rate was 27.3%. There was no significant difference in the residual amount between 2011 and 2013 (t = 1.106, P = 0.270), the difference between the two groups was statistically significant (χ2 = 16.44, P = 0.000) (χ2 = 20.832, P = 0.000), and there was a significant difference between the super-standard rates of lamb and beef (χ2 = 12.423, P = 0.000) Exceeded the situation significantly higher than pork and mutton situation. Conclusions The excessive nitrite pollution of bulk cooked meat products in Pingdingshan City is more serious, of which the exceeding standard rate of beef is the highest, seriously affecting the health of the people and should be paid great attention by the society.
