目的了解不同季节湖南全省非发酵性豆制品安全状况和污染水平,为制定食品安全标准和食品安全监督管理提供科学依据。方法分冬春、夏秋两季在湖南全省14个地州市共采集非发酵性豆制品380份,按照GB4789.4-2010和GB 4789.30-2010检测沙门菌和单核细胞增生李斯特菌。结果 203份夏秋季样本检出1份沙门菌阳性、2份单核细胞增生李斯特菌阳性;177份冬春季样本检出1份沙门菌阳性、3份单核细胞增生李斯特菌阳性;冬春季和夏秋季沙门菌阳性检出率差异无统计学意义(P>0.05);冬春季和夏秋季单核细胞增生李斯特菌阳性检出率差异无统计学意义(P>0.05)。结论不同生产季节非发酵性豆制品均存在沙门菌和单核细胞增生李斯特菌污染风险。
Objective To understand the safety status and pollution level of non-fermented soybean products in different seasons in Hunan Province and provide scientific basis for formulating food safety standards and food safety supervision and management. Methods Divided winter and spring, summer and autumn in Hubei province 14 prefectures and cities in a total collection of 380 non-fermented soybean products, according to GB4789.4-2010 and GB 4789.30-2010 detection of Salmonella and Listeria monocytogenes. Results A total of 203 samples were positive for Salmonella in summer and autumn, and 2 were positive for Listeria monocytogenes. One hundred and seven Salmonella positive samples were detected in winter and spring samples, and three were positive for Listeria monocytogenes. There were no significant differences in the positive rates of Salmonella between spring and summer (P> 0.05). There was no significant difference in the positive rates of Listeria monocytogenes in winter, spring and summer (P> 0.05). Conclusion The risk of Salmonella and Listeria monocytogenes contamination exists in non-fermented soy products in different production seasons.
