目的了解包头市食品中食源性致病菌的污染状况和污染水平,初步确定高危食品的种类,为食源性疾病的监测提供科学的依据。方法按全国食品污染物监测网的工作手册,2010年-2012年采集16大类食品,共计877份,对沙门菌、金黄色葡萄球菌、蜡样芽孢杆菌、单核细胞增生李斯特菌、大肠杆菌O157:H7和副溶血性弧菌等12种食源性致病菌进行监测分析。结果 877份食品样品中,检出致病菌35株(3.99%)。其中,蜡样芽孢杆菌17株(1.94%),金黄色葡萄球菌8株(0.91%),沙门氏菌4株(0.46%),单核细胞增生李斯特菌6株(0.68%)。结论蜡样芽孢杆菌、金黄色葡萄球菌、单核细胞增生李斯特菌和沙门氏菌对包头市食品的污染普遍存在。熟制米面制品、生畜肉、肉制品的污染尤为严重,是重要的高危食品,对此应引起重视。
Objective To understand the status and level of contamination of food-borne pathogens in food in Baotou City, and to initially identify the types of high-risk foods and provide a scientific basis for the monitoring of food-borne diseases. Methods According to the work manual of National Food Contamination Monitoring Network, 16 categories of food were collected from 2010 to 2012, a total of 877, Salmonella, Staphylococcus aureus, Bacillus cereus, Listeria monocytogenes, large intestine Bacillus O157: H7 and Vibrio parahaemolyticus 12 kinds of foodborne pathogens were monitored and analyzed. Results Among 877 food samples, 35 (3.99%) pathogenic bacteria were detected. Among them, 17 strains of Bacillus cereus (1.94%), 8 strains of Staphylococcus aureus (0.91%), 4 strains of Salmonella (0.46%) and 6 strains of Listeria monocytogenes (0.68%). Conclusion Bacillus cereus, Staphylococcus aureus, Listeria monocytogenes and Salmonella are common contamination of food in Baotou. Cooked rice products, raw meat, meat pollution is particularly serious, is an important high-risk food, which should arouse attention.
