目的:对高校食堂实施食品安全规范化管理后的效果进行评估,探索行之有效的食品安全管理方法。方法:选取有代表性的高校一所,9户食堂随机分为2组,7户一组为实验组,2户一组为对照组。实验组食堂实施规范化管理的干预措施,对照组实施日常管理。采用食品安全量化监督检查表评估现场卫生状况;餐饮具、备餐间操作台、从业人员手采样送实验室检测大肠菌群;从业人员实施干预措施前后问卷调查。结果:实施规范化管理后,食堂卫生状况良好率从28.57%上升到100.00%,餐饮具合格率从87.72%上升到93.98%,备餐间操作台面合格率从55.56%上升到92.00%,从业人员手合格率从56.45%上升到87.23%,与实施前比较、与对照组比较差别均有显著性差异(P<0.05);从业人员经过规范化管理培训后,卫生知识问卷调查,测试分数从68.28分提高到82.31分,卫生知识水平提高明显。结论:高校食堂实施规范化管理,有助于提高从业人员的卫生知识水平,提升食堂的食品卫生状况,降低食品安全的风险。建议在食堂中全面推广并实施规范化管理。
Objective: To evaluate the effect of standardized management of food safety in college canteens and to explore effective methods of food safety management. Methods: One representative university was selected. Nine canteens were randomly divided into two groups. Seven were in experimental group and two in control group. Experimental group canteen standardized management interventions, the control group to implement daily management. Food safety quantitative supervision and inspection checklist to assess the on-site health conditions; Tableware, food preparation room operation desk, practitioners hand samples sent to the laboratory detection of coliform bacteria; practitioners before and after the implementation of the intervention questionnaire. Results: After the implementation of standardized management, the good condition of canteen health rose from 28.57% to 100.00%, the qualification rate of tableware increased from 87.72% to 93.98%, the pass rate of tabletop operation table increased from 55.56% to 92.00% The qualified rate increased from 56.45% to 87.23%, compared with the control before the difference was significant (P <0.05); practitioners after standardized management training, health knowledge questionnaire, test scores increased from 68.28 points To 82.31 points, health knowledge increased significantly. Conclusion: The standardized management of canteens in colleges and universities helps to improve the health knowledge level of employees, improve the food hygiene status of canteens and reduce the risk of food safety. Proposed in the canteen to promote and implement standardized management.
