[目的]了解山东省市售食品单核细胞增生李斯特氏菌污染状况。[方法]2003~2007年夏秋季,在山东省部分地区集贸市场、超市采样检测。[结果]2003~2007年,合计检测各种食品1 502份,检出单增李斯特氏菌133份,检出率为8.85%。单增李斯特氏菌检出率,生鸡肉为9.54%,生羊肉为3.35%,生牛肉为14.47%,生猪肉为24.85%,散装熟肉为6.84%,生食蔬菜为1.34%(P<0.01);2003年为5.13%,2004年为3.63%,2005年为19.22%,2006年为3.52%,2007年为12.86%(P<0.01);济南市为9.34%,烟台市为3.77%,菏泽市为11.01%,莱芜市为7.51%,德州市为11.20%,潍坊市为4.61%(P>0.05)。小鼠毒力试验显示检出的菌株均具有较强的致病性。[结论]山东省部分地区集贸市场食品摊点销售的食品李斯特氏菌污染较为严重。
[Objective] To understand the contamination of Listeria monocytogenes in Shandong Province. [Method] The summer and autumn seasons from 2003 to 2007 were sampled and tested in the bazaars and supermarkets in some areas of Shandong Province. [Results] From 2003 to 2007, a total of 1 502 samples of various foods were detected, and 133 samples of Listeria monocytogenes were detected with a detection rate of 8.85%. The detection rate of Listeria monocytogenes was 9.54% for raw chicken, 3.35% for raw mutton, 14.47% for raw beef, 24.85% for raw pork, 6.84% for cooked meats and 1.34% for raw vegetables ), 5.31% in 2003, 3.63% in 2004, 19.22% in 2005, 3.52% in 2006 and 12.86% in 2007 (P <0.01); 9.34% in Jinan and 3.77% in Yantai; 11.01% in the city, 7.51% in Laiwu City, 11.20% in Dezhou City, and 4.61% in Weifang City (P> 0.05). Toxicity tests in mice showed that all strains tested showed strong pathogenicity. [Conclusion] The foodstuffs Listeria foodstuffs distributed in the bazaars in some areas of Shandong Province were more polluted.
