目的了解腾冲县城生产加工销售糕点的卫生质量,确保糕点食品安全,旨在预防食源性疾病和食物中毒。方法对2003—2007年该县城生产加工销售的各类糕点监测结果进行统计分析和评价。结果该县城生产加工的糕点卫生质量总合格率为78.42%,各年间合格率差异有统计学意义(χ2=23.01,P<0.01)。按类别分,月饼合格率最高(88.68%);按指标分,微生物不合格为169项UQW,不合格率以霉菌最高(49.11%);铅、砷、致病菌未检出。不合格的项目主要是霉菌。结论该县城生产加工的糕点受到微生物的污染严重,总合格率偏低,应加强多部门联合执法及监管力度。
Objectives To understand the hygienic quality of pastries produced, processed and sold in Tengchong County to ensure the safety of pastry foods and to prevent foodborne illness and food poisoning. Methods The statistical analysis and evaluation of the monitoring results of all kinds of cakes in the production, processing and sales of the county from 2003 to 2007 were made. Results The total passing rate of the hygiene quality of the pastries produced and processed in this county was 78.42%. There was a significant difference in the passing rates among all the years (χ2 = 23.01, P <0.01). According to the classification, the highest rate of moon cakes (88.68%); According to the index, the number of unqualified microorganisms was 169 UQW, the highest rate of unqualified rate was mold (49.11%); the lead, arsenic and pathogenic bacteria were not detected. Failed projects are mainly mold. Conclusion The cakes produced and processed in this county are seriously polluted by microorganisms and the total qualified rate is low. Therefore, the joint enforcement of law and supervision should be strengthened.
