大豆历来是我国人民重要的食用蛋白质来源。大豆加工利用的历史虽然悠久,但生产水平低,深加工程度不高。如何更有效地挖掘大豆综合利用潜力,是一项重要的开发研究课题。 本期发表的这两篇文章,介绍了大豆的加工利用,并提出一些设想和建议。我们欢迎广大科技工作者为本刊撰写有关大豆加工利用新成果、新技术、新产品的文章,提高我国大豆深加工和综合利用的科技水平。
Soybeans have long been an important source of food for our people. Although the history of soybean processing and utilization of a long time, but the low level of production, deep processing is not high. How to tap the potential of comprehensive utilization of soybean is an important research topic. The two articles published in this issue describe the processing and utilization of soybeans and put forward some ideas and suggestions. We welcome the large number of scientists and technologists to write articles about our soybean processing and utilization of new achievements, new technologies and new products, and to raise the technological level of deep processing and comprehensive utilization of soybean in China.
