用高压锅做饭比用普通锅快多了。这是为什么呢?大家知道:煮饭的温度高,饭才熟得快,高压锅恰恰能提高锅里的水温。水到100℃左右就沸腾,沸腾时的温度就是水的沸点。用普通锅煮饭时,如果水沸腾后继续加热,水就会不断地吸收热量,由液态变成水蒸气跑到空气中去,使煮饭的水温无法再提高,所以要用较长的时间才能把饭煮熟。用高压锅煮饭时,其特制的密封圈不让锅内蒸汽跑掉,继续加热时就使锅内压力增大,水温就可以提高到108℃左右。所以用高压锅做饭又快又节约能源。
