对粗唇的肌肉营养成分进行了测定,并对其营养价值进行评价。结果表明,粗唇肌肉水分含量为81.82%,肌肉粗蛋白含量为16.02%,肌肉粗脂肪含量为3.69%。17种氨基酸的总含量为14.13%,其中必须氨基酸含量为6.06%,占氨基酸总量的百分比为42.89%。四种鲜味氨基酸的总含量5.43%。必需氨基酸含量总量超过WHO/FAO提出的标准;氨基酸分(AAS)和化学分(CS)分别为0.81和0.41,必需氨基酸指数(EAAI)为76.27。
The muscle nutrients of Rough laburnum were determined and their nutritional value was evaluated. The results showed that the moisture content of crude muscle was 81.82%, muscle crude protein content was 16.02% and muscle crude fat content was 3.69%. The total content of 17 amino acids was 14.13%, of which the essential amino acid content was 6.06% and the percentage of total amino acids was 42.89%. Four kinds of umami amino acid total content of 5.43%. The total amount of essential amino acids exceeded the standards set by the WHO / FAO; the Amino Acid Score (AAS) and Chemical Score (CS) were 0.81 and 0.41, respectively, and the Essential Amino Acids (EAAI) was 76.27.
