脱水蔬菜是近来国际上新兴的一种绿色食品。它选用无公害蔬菜,应用冻干技术在瞬间脱水(脱水率达96%~97%),既保持了新鲜蔬菜和果品的组织结构、色泽、营养成分,又复水性强,短时间浸泡即可恢复原状,具有耐贮存、便携带、食用卫生等特点,因此,脱水蔬菜也叫冻干食品。目前,我国的冻干食品企业已经具有了一定的实力,已开发了大蒜片、青红椒、洋葱圈、胡萝卜丁、土豆、黄瓜、苹果片、梨丁、菠菜、白菜、甘蓝等20多个品种,近一半产品供不应求。但也应看到我国的冻干食品工业尚处于发展初期,产量还很低,只是由于国际市场上冻干食品供不应求,才出现了外商纷纷到我国来求购的场面。
Dehydrated vegetables are a new kind of green food that has recently emerged internationally. It uses non-pollution vegetables and applies freeze-drying technology to instantaneously dehydrate (dehydration rate 96% to 97%). It not only maintains the structure, color and nutrient content of fresh vegetables and fruits, but also has strong rehydration and can be soaked in a short time. Restitution, with storage, portable, edible health and other characteristics, therefore, dehydrated vegetables are also called freeze-dried foods. At present, China’s freeze-dried food companies already have a certain strength and have developed more than 20 garlic slices, green and red peppers, onion rings, carrots, potatoes, cucumbers, apple slices, pear diced, spinach, cabbage, and cabbage. Varieties, nearly half of the products are in short supply. However, it should also be noted that China’s freeze-dried food industry is still in its early stages of development, and its output is still very low. Only due to the shortage of lyophilized food on the international market, foreign buyers have come to China to purchase.
