采用国标方法测定了棕腹刺河豚肌肉中三大营养成分。结果表明,棕腹刺河豚肌肉的可食部87.30%;每100g可食部中水分78.50g,蛋白质19.30g,脂肪1.94g,碳水化合物0.26g,热量95.70kcal(1cal=4.1868J)。同法测定了黑鳃兔头豚肌肉的营养成分,结果表明,可食部66.14%;每100g可食部中水分80.18g,蛋白质18.70g,脂肪0.68g,碳水化合物0.25g,热量81.92kcal。两种河豚均在珠江口捕获。综合来看,棕腹刺河豚可食部、蛋白质、脂肪、碳水化合物、热量等均比黑鳃兔头豚高,且安全食用[1]。据此认为,棕腹刺河豚为良好的蛋白质和脂肪资源,建议在秋冬季节捕捞和开发棕腹刺河豚。
The national standard method was used to determine the three major components of the puffer fish muscle. The results showed that 87.30% of the edible part of B. przewalskii muscles was 78.50g per 100g of edible part, 19.30g of protein, 1.94g of fat, 0.26g of carbohydrate and 95.70kcal of heat (1cal = 4.1868J). The results showed that the edible part was 66.14%; the water content was 80.18g per 100g edible part, the protein was 18.70g, the fat was 0.68g, the carbohydrate was 0.25g and the calorie was 81.92kcal. Both puffer species are captured at the Pearl River estuary. Taken together, the abdomen pufferfish Edible Ministry, protein, fat, carbohydrates, calories than black gill rabbit dolphin high, and safe to eat [1]. According to this, brown belly prodigal puffer fish as a good protein and fat resources, it is recommended in the autumn and winter fishing and development of palm abdomen puffer fish.
