我国的膳食习惯用油煎炸炒的食物很多,因此厨房的墙壁、钢窗、窗纱、家具上就易积很厚的油腻,并被腐蚀。若仅在厨房排烟井上开个排气口,对厨房进行全面通风,排烟效果并不佳。原因是吸气口速度衰减很快,做饭炒菜产生的油烟基本不在吸气口的作用范围内,在热压的作用下直冲屋顶,再在室内横向气流的影响下到处漂溢。国外的厨房设计,一般都确定炉灶的位置,在炉面上部0.8~1米处装排烟罩,直接捕吸油烟气进行处理或排出室外,厨房外窗不开就可有效地保持厨房清洁,不受外界气候的影响。现本文就厨房排烟问题做一些探讨。理论研究证明利用排烟井的烟囱效应进行自然
