焯水:★★★★在热水中,农药的溶解性增强,因此去除农残的效率比冷水高。研究显示,焯水1~10分钟,去除农残的效果都不错,而且并不是时间越长效果越好。考虑到营养流失的因素,建议焯水1~2分钟为宜。比如清水漂洗“广东菜心”5~10分钟,可以去除甲胺磷残留30%左右,而焯水1分钟就可以去掉90%以上。焯水去农残的效果不错,很多绿叶菜可以采用这种方法,但有不少蔬菜不适合焯水,更不用说水果了。
