七、人的营养人体需要的营养中,蛋白质是构成身体细胞的基本物质。它占人体总干重的50%,肌肉、骨骼、软骨、血液、淋巴液都含蛋白质,所有的酶和许多激素也都是蛋白质。人体需要蛋白质的量,普通平均体重每公斤需蛋白质1—1.5克。老年人以一克为宜。因为人体的皮肤、肌肉等的蛋白质150天左右就要更新一半,而肝脏和血浆的蛋白质10天中就要更新一半。
