单品类餐饮品牌在行业内发展得愈演愈烈,细分之下,虾、鸭、牛、鱼等等都占据了部分江山,但有一类单品一直少有出现,这就是兔肉。2015年2月新开业的辣倒兔以兔肉为主打品类推出,短短两个多月,受到了四川、重庆等地吃货的追捧。兔肉目前属于典型的地域性食物,四川、重庆等地在接待客人方面已形成“无兔不成席”的习俗,他们每年要吃掉大约2亿只兔子。
